Betty Rogers' Lemon Bars

Betty Rogers' Lemon Bars

Betty received so many requests for this recipe (remember the delicious dessert served at the December Luncheon Meeting?), that she sent it in for the Voter.

2 cups flour   ½ cup powdered sugar

1 cup shortening (½ c butter and ½ c Crisco)

  1. Sift together flour and powdered sugar.

  2. Cut in shortening and butter until the mixture clings together.

  3. Press into bottom of 9 x 13-inch pan.

  4. Bake 20-30 min. in a 350-degree oven.

    4 beaten eggs   ¼ cup flour

    1¾ cup sugar   ½ tsp baking powder   1/3 cup lemon juice

  5. Mix eggs, sugar and lemon juice.

  6. Stir in flour and baking powder and pour over baked crust.

  7. Bake 25 min. in 350-degree oven.

  8. Cool. Sprinkle with powdered sugar. Cut into small squares.
